Ingredients

  • 1 Coles Australian Free Range Egg
  • 1 tbs milk
  • 1¼ cups (95g) panko breadcrumbs
  • 2 tsp cracked black pepper
  • 1 tbs finely chopped flat-leaf parsley
  • 4 Coles Australian Beef Schnitzels, halved crossways
  • Rice bran oil, to shallow-fry
  • 1 cup finely shredded cabbage
  • 120g baby spinach leaves
  • ⅓ cup (100g) honey mustard mayonnaise
  • Lemon wedges, to serve

Method

  1. Step 1

    Whisk the egg and milk in a shallow bowl. Season. Combine breadcrumbs, pepper and parsley in a separate shallow bowl. Dip beef in egg mixture, then in breadcrumb mixture to evenly coat.
  2. Step 2

    Heat the oil in a medium frying pan over medium-high heat. Add the beef to the pan and cook for 2 mins each side or until golden. Transfer to a plate lined with paper towel.
  3. Step 3

    Divide cabbage and spinach among serving plates. Drizzle with mayonnaise. Top with beef. Serve with lemon wedges.
