After a simple dinner idea? Try these chicken drumsticks with fried rice! Full of chilli and spice for maximum flavour, it will be a new household favourite.

Pineapple and five-spice glazed drumsticks with quick fried rice

Ingredients

  • 2 tbs peanut oil
  • 8 Coles RSPCA Approved Chicken Drumsticks
  • 440g can pineapple pieces in natural juice, drained, juice reserved
  • 5cm piece ginger, peeled, cut into matchsticks
  • 1 tbs soy sauce
  • 1 chicken stock cube, crumbled
  • 1 tsp Chinese five spice
  • ½ cup (125ml) water
  • 1 spring onion, sliced
  • 450g pkt microwavable Jasmine rice
  • 300g pkt Coles Australian Superfood Stir-fry
  • ¼ cup (60ml) oyster sauce
  • 1 long red chilli, thinly sliced
  • Spring onion, extra, thinly sliced, to serve

Method

  1. Step 1

    Heat half the oil in a large frying pan over medium-high heat. Add chicken and cook, turning, for 6 mins or until browned all over. Add reserved pineapple juice, ginger, soy, stock cube, five spice and water. Bring to a simmer.
  2. Step 2

    Reduce heat to medium-low and simmer, covered, for 15 mins or until chicken is almost cooked through. Increase heat to medium-high. Add half the pineapple and cook, uncovered, for 10 mins or until liquid has reduced and thickened.
  3. Step 3

    Meanwhile, heat remaining oil in a large saucepan over medium-high heat. Add onion and cook, stirring for 2 mins or until starting to brown. Add rice and cook, stirring, for 1 min. Add stir-fry mix, oyster sauce, remaining pineapple and chilli and cook, stirring, for 3 mins or until heated through.
  4. Step 4

    Sprinkle with spring onion. Serve chicken with fried rice.
