Pineapple and Chorizo Pizza

Ingredients

  • 1 x 1kg pkt Laucke Pizza & Focaccia Mix
  • ⅔ cup (185g) Mutti Pizza Sauce Aromatica
  • 1 chorizo, thinly sliced
  • 432g can Dole Pineapple Pieces in Juice, drained
  • 1 red capsicum, seeded, thinly sliced
  • 4 bocconcini, torn
  • Baby spinach leaves, to serve

Method

  1. Step 1

    Combine one 500g packet flour and 1 sachet of yeast from the pizza and focaccia mix in a large bowl with 1⅓ cups (330ml) lukewarm water. Mix into a dough following packet directions. Knead dough on a lightly floured surface for 10 mins or until smooth and elastic. Place in a clean, oiled bowl. Cover and set aside for 10 mins to rest.

  2. Step 2

    Grease two 28cm round pizza trays. Divide dough in half and shape each half into a 28cm round disc. Place on prepared trays, pushing dough to the edges. Spread each pizza base with pizza sauce and top with chorizo, pineapple, capsicum and bocconcini. Bake for 15 mins or until chorizo is golden and the base is crisp. 

  3. Step 3

    Sprinkle the pizzas with spinach leaves to serve
