Ingredients

  • 1/2 cup (140g) tahini
  • 1/3 cup (80ml) olive oil
  • 2 tbs maple syrup
  • 2 Coles Australian Free Range Eggs
  • 1/2 cup (75g) wholemeal self-raising flour
  • 1/2 cup (60g) Wellness Road Australian Almond Flour
  • 440g can pineapple pieces in natural juice, drained
  • 1 tbs maple syrup, extra

Method

  1. Step 1

    Preheat oven to 180°C. Grease a 20cm x 30cm lamington pan and line with baking paper. Combine tahini, oil, maple syrup and eggs in a large bowl. Whisk until combined. Add flour and almond flour and stir to combine. Pour the mixture into the prepared pan and smooth the surface. Top with pineapple, gently pressing into the surface.
  2. Step 2

    Bake for 20-25 mins or until a skewer inserted in the centre comes out clean. Brush the pineapple with extra maple syrup. Cut into pieces and serve warm or at room temperature.
