Plum and raspberry crumble


  • 6 plums, stones removed, cut into wedges
  • 125g punnet raspberries
  • 2 tbs maple syrup
  • ½ cup (75g) plain flour
  • 75g chilled butter, chopped
  • ½ cup (40g) shredded coconut
  • ½ cup (110g) brown sugar
  • Vanilla ice-cream, to serve

  1. Step 1

    Preheat oven to 180°C. Place plum, raspberries and maple syrup in an 8-cup (2L) ovenproof dish. Toss to combine.
  2. Step 2

    Place flour and butter in a large bowl. Use your fingertips to rub butter into flour until mixture resembles coarse breadcrumbs. Stir in coconut and sugar. Sprinkle crumble topping evenly over the fruit mixture. Bake for 20-25 mins or until crumble is golden and crispy. Serve with ice-cream.
