Ingredients

  • 200g dark chocolate
  • 1/3 cup (80ml) thickened cream
  • 100g Coles Iced Fruit Cake Slice, icing removed, cake crumbled
  • 1/2 tsp mixed spice
  • 200g milk chocolate melts, melted
  • 50g white chocolate melts, melted
  • Red and green Mars M&M’s Minis, to decorate

Method

  1. Step 1

    Place the chocolate and cream in a large heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water). Use a metal spoon to stir for 5 mins or until chocolate melts and mixture is smooth. Remove from heat. Add fruit cake and mixed spice. Use a metal spoon to stir to combine. Cover with plastic wrap. Place in the fridge for 2 hours or until the mixture is firm.
  2. Step 2

    Line a baking tray with baking paper. Roll 2-tsp portions of mixture into balls. Place on the lined tray. Place in the fridge for 1 hour to set.
  3. Step 3

    Place the milk chocolate in a small bowl. Use a fork to dip 1 truffle into the milk chocolate, shaking off excess. Transfer to the lined tray. Repeat with the remaining truffles and milk chocolate. Set aside to set.
  4. Step 4

    Place the white chocolate in a sealable plastic bag. Cut off 1 corner. Pipe a little white chocolate onto each truffle. Top with M&M’s to decorate. Set aside for 30 mins to set.

    Make the truffles up to 3 days ahead. Store in an airtight container in the fridge.

    How do I coat truffles?

    The trick is to use a fork to lower them into the melted chocolate. Then turn to coat and lift out, tapping the fork on the side of the bowl to remove excess chocolate.
