Pork and plum stir-fry

Ingredients

  • 450g pkt Fantastic Fresh Hokkein Noodles
  • 1 tbs vegetable oil
  • 500g Coles Australian Pork Extra Trim Fillets, thinly sliced
  • 1 red onion, cut into thin wedges
  • 1 garlic clove, sliced
  • 2cm piece ginger, cut into matchsticks
  • 3 black plums, stoned, cut into wedges
  • 2 tsp brown sugar
  • 1/2 red chilli, thinly sliced
  • 1 bunch baby broccoli, halved horizontally
  • 1/4 cup (60ml) sweet chilli sauce
  • Spring onions, thinly sliced, to serve

Method

  1. Step 1

    Prepare the noodles following packet directions. Drain. Set aside.
  2. Step 2

    Meanwhile, heat half the oil in a wok over medium-high heat. Cook the pork, in batches, for 2 mins or until lightly browned. Transfer to a plate.
  3. Step 3

    Heat the remaining oil over medium-high heat. Add the onion and stir-fry for 2 mins or until slightly caramelised. Add garlic and ginger and stir-fry for 1 min or until fragrant. Add plums, sugar and chilli and stir-fry for 2-3 mins or until plums are slightly caramelised. Return pork to the wok along with broccoli, sweet chilli sauce and ¼ cup (60ml) water. Stir-fry for 2-3 mins or until pork is cooked through. Add the noodles and gently toss to combine. Divide stir-fry among serving bowls. Top with spring onions to serve.
