Pork, apple and noodle stir-fry

Ingredients

  • 3 nests Coles Asia Egg Noodles
  • 2 tsp sesame oil
  • 5 (approx 260g) Coles Australian Pork Loin Thin Cut Steaks, thinly sliced
  • 1 brown onion, thinly sliced
  • 3 garlic cloves, crushed
  • 200g brussels sprouts, shredded
  • 1 Royal Gala apple, cored, thinly sliced
  • 1/4 cup (60ml) soy sauce
  • 1/3 bunch coriander leaves

Method

  1. Step 1

    Cook the noodles in a large saucepan of boiling water, stirring occasionally, for 4 mins or until al dente. Drain well.

  2. Step 2

    Meanwhile, heat half the oil in a wok or large frying pan over high heat. Stir-fry the pork, in 2 batches, for 3 mins or until pork is browned and cooked through. Transfer to a heatproof bowl and cover to keep warm.

  3. Step 3

    Heat the remaining oil in the wok or pan over high heat. Add the onion, garlic, brussels sprout and apple and stir-fry for 4 mins or until the vegetables soften.

  4. Step 4

    Return the pork to the wok or pan. Add the noodles and soy sauce. Stir-fry for 2 mins or until heated through. Sprinkle with the coriander to serve.
