Pork Belly Bau

Ingredients

  • 350g pkt Coles Pork Belly with Salt & Pepper
  • 560g pkt bao buns
  • 1 carrot, peeled, cut into long matchsticks
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 2 spring onions, thinly sliced lengthways
  • Kewpie mayonnaise, to serve
  • Sriracha sauce, to serve
  • Coriander leaves to serve
  • Toasted sesame seeds, to serve
  • Lime wedges, to serve

Method

  1. Step 1

    Preheat air fryer to 200°C. Place pork in the basket of the air fryer and cook for 25 mins or until golden and cooked to your liking. Alternatively, preheat oven to 220°C and line a baking tray with baking paper. Place pork on lined tray and roast for 30 mins or until golden and cooked to your liking. Set aside for 5 mins to rest. Cut into thin slices.
  2. Step 2

    Prepare bau buns following packet directions.
  3. Step 3

    Divide bau buns among serving plates. Fill with carrot, cucumber, spring onion and pork. Drizzle with mayonnaise and sriracha or chilli sauce. Sprinkle with coriander and sesame seeds. Serve with lime wedges.
