Pork bolognese

Ingredients

  • 1 tbs olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 1kg Coles Australian Pork Mince
  • 2 x 400g cans diced tomatoes
  • 1/4 cup (70g) tomato paste
  • 1 tsp caster sugar
  • 1 tbs chopped basil
  • 1 tbs chopped oregano
  • 375g fettuccine
  • Finely grated parmesan, to serve
  • Basil leaves, to serve
  • Oregano leaves, to serve

Method

  1. Step 1

    Heat oil in a large heavy-based saucepan over medium heat. Add onion and garlic. Cook for 2 mins or until the onion softens. Increase heat to high. Add the mince and cook for 5 mins, stirring with a wooden spoon to break up any chunks.
  2. Step 2

    Add the diced tomato, tomato paste, sugar, chopped basil and chopped oregano. Bring to the boil. Reduce heat to medium-low. Cook for 10 mins or until the mince is cooked through and the mixture thickens slightly.
  3. Step 3

    Meanwhile, cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain well.
  4. Step 4

    Divide pasta among serving bowls. Spoon over half the mince mixture (or as required). Sprinkle with parmesan, basil leaves and oregano leaves.
