Pork chow mein with baby broccoli and shiitake

Ingredients

  • 350g pkt fresh Singapore noodles
  • 500g pork mince
  • 1/2 tsp Chinese five spice
  • 1½ tbs vegetable oil
  • 1 bunch baby broccoli, thick ends of stems trimmed, halved lengthways
  • 100g fresh shiitake mushrooms, stems trimmed, thinly sliced
  • 3 spring onions, sliced, white and green parts divided
  • ⅓ cup (80ml) oyster sauce

Method

  1. Step 1

    Prepare the noodles following packet directions. Rinse under cold water. Drain.
  2. Step 2

    Heat a large non-stick frying pan over high heat. Add pork and Chinese five spice, and stir-fry, breaking up into 3cm pieces, for 4 mins or until browned. Transfer to a plate.

  3. Step 3

    Heat oil in the pan over high heat. Add the baby broccoli and mushrooms to pan and stir-fry for 3 mins or until baby broccoli is just tender. Add the white parts of the spring onions and stir-fry for 30 secs. Return pork to pan. Add the noodles, oyster sauce, 1/3 cup (80ml) water and half of green parts of spring onions. Toss to heat through.
  4. Step 4

    Divide among bowls, garnish with the remaining green parts of spring onions and serve.
