Pork with peach salsa


  • 2 tbs olive oil
  • 4 Coles Australian Pork Forequarter Chops
  • 4 peaches, stoned, chopped
  • ½ small red onion, quartered, thinly sliced
  • ½ cup coriander leaves
  • ½ cup mint leaves
  • 1 tbs lime juice
  • Coles Australian 4 Leaf Salad, to serve

  1. Step 1

    Rub half the oil over the pork. Season. Heat a large frying pan over medium-high heat. Add the pork and cook for 3 mins each side or until browned and cooked through. Transfer to a plate. Cover with foil and set aside for 5 mins to rest.
  2. Step 2

    Combine the peach, onion, coriander, mint, lime juice and remaining oil in a medium bowl. Season. Serve the pork with the peach salsa and salad leaves.
