This Porterhouse steak with tomato rice salad makes an easy main when entertaining. Filled with smoky, fresh and nutty flavours, it will leave your guests satisfied.

Ingredients

  • 250g pkt microwavable black or brown rice
  • 4 Coles Australian Beef Porterhouse Steaks
  • 1 tbs olive oil
  • 40g baby rocket leaves
  • 400g Perino tomatoes, halved
  • ½ red onion, thinly sliced
  • ¼ cup (40g) almonds, toasted, chopped
  • 2 tbs ranch dressing

Method

  1. Step 1

    Heat the rice following packet directions. Place in a heatproof bowl and set aside to cool.
  2. Step 2

    Meanwhile, heat a barbecue grill or chargrill on high. Coat the steaks in oil and season. Cook for 3 mins each side or until cooked to your liking. Transfer to a plate. Cover and set aside for 5 mins to rest.
  3. Step 3

    Add the rocket, tomato, onion and almond to the rice in the bowl. Toss to combine.
  4. Step 4

    Place the ranch dressing and 1 tbs warm water in a small bowl or jug. Stir to combine. Divide the steak and salad among serving plates. Serve drizzled with the dressing.
