Portuguese beef with tomato rice

Served with a tasty tomato rice, this Portuguese beef dish is the ultimate way to elevate meal time this week.

Portuguese beef with tomato rice


  • 2 dried bay leaves
  • 2 tsp red wine vinegar
  • 1½ tsp paprika
  • 2 garlic cloves, crushed
  • 2½ tbs olive oil
  • 750g Coles Australian Beef Fillet Steaks
  • 1 small brown onion, finely chopped
  • 1 green capsicum, finely chopped
  • 450g pkt microwave brown rice
  • 2 tomatoes, seeded, chopped
  • ⅓ cup finely chopped parsley
  • Parsley leaves, to serve

  1. Step 1

    Combine bay leaves, vinegar, 1 tsp of paprika, 1 garlic clove and 2 tbs of oil in a glass or ceramic dish. Season. Add beef to paprika mixture and toss to coat. Set aside for 30 mins to marinate.

  2. Step 2

    Meanwhile, heat remaining oil in a saucepan over medium heat. Add onion, capsicum and remaining garlic and cook, stirring, for 5 mins or until onion softens. Add remaining paprika and cook for 1 min. Heat rice following packet directions. Add rice and tomato to the pan. Cook, stirring, for 3 mins. Season. Stir through chopped parsley.
  3. Step 3

    Heat a barbecue grill or chargrill on medium-high. Cook beef for 3-4 mins each side or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 5 mins to rest. Thickly slice.
  4. Step 4

    Divide rice mixture among serving bowls. Top with beef. Sprinkle with parsley leaves to serve.
