Not your usual potato bake recipe, this version is made with leftover potato salad and roast meat from your festive feast, ensuring nothing goes to waste.

Potato bake

Ingredients

  • 5 cups (1kg) leftover roast meat such as chicken, turkey, pork, or ham, shredded
  • 1 cup roast chicken
  • 1/2 red onion or 1 spring onion, thinly sliced
  • 1 tbs woody herbs such as thyme or rosemary
  • 300ml thickened cream or sour cream
  • 2/3 cup (80g) grated cheese such as cheddar, pizza or mozzarella

Method

  1. Step 1

    Preheat oven to 200°C. Grease a shallow 6-cup (1.5L) capacity baking dish.  Cut any large potato pieces into bite-size pieces. 

  2. Step 2

    Layer 1/3 of the potatoes in the base of the baking dish. Top with half the onion or spring onion and chicken, turkey, pork or ham, then 1/3 of the herbs, cream and cheese. Repeat layering two more times, finishing with the remaining potatoes, cream and cheese. Season. Cover loosely with foil. 

  3. Step 3

    Bake for 20 mins, remove the foil and cook for a further 10-15 mins until golden and bubbling. Sprinkle with remaining herbs.
