Take a classic caesar salad recipe to the next level with this waste-not twist. It’s a great way to use up any leftovers from your get-together.

Potato caesar salad


  • 200g lettuce
  • 3 cups (600g) leftover potato salad
  • 4 free-range eggs, hard boiled
  • 4 radishes, carrots or cucumber, thinly sliced
  • 1 cup (80g) parmesan cheese or hard cheese, shaved
  • 8 slices baguette or leftover bread
  • 400g leftover chicken, leg ham or turkey, sliced
  • Caesar salad dressing or other creamy dressing, to serve

  1. Step 1

    Arrange lettuce leaves in a large shallow bowl and top with leftover potato salad. Slice the eggs and add to the salad with radish, carrot or cucumber and one cup of shaved parmesan or other hard cheese.

  2. Step 2

    Preheat a grill to high. Place the baguette slices or leftover bread on an oven tray and spray with some oil spray. Grill for 1 minute on each side, until golden.

  3. Step 3

    Arrange the baguette or other bread and 400g of sliced leftover chicken, ham or turkey meat over the salad. Drizzle with caesar salad dressing and serve with extra baguette slices if you like.
