Perfect for picnics, this loaded Christmas leftover sandwich recipe will ensure no dish from the festivities goes to waste.

Potato salad sandwich

Ingredients

  • 1 cup leftover cooked chicken, turkey or ham, shredded
  • 1 apple, cored, finely chopped
  • 1/2 cup (50g) walnuts, pecans or almonds, toasted, chopped
  • 1/4 cup (35g) semi-dried tomatoes or cherry tomatoes, chopped
  • 8 slices thick white bread or other bread
  • 1/3 cup (100g) aioli or mayonnaise
  • 1/3 cup (110g) cranberry sauce or chutney
  • 40g salad leaves

Method

  1. Step 1

    Combine leftover potato salad, chicken, turkey or ham, apple, walnuts, pecans, or almonds and tomatoes in a large bowl and mix well. Season with salt and pepper.

  2. Step 2

    Spread half the bread slices with aioli or mayonnaise and the other half with cranberry sauce or chutney. Spoon the potato mixture over half the bread slices, top with some salad leaves and sandwich with remaining bread slices. Serve immediately.

This recipe will also work well with rye, multigrain or soft sourdough.
