Keep it fresh this meal time with this scrumptious prawn and avocado salad. Made with Australian Tiger Prawns it is a summer treat.

Prawn and avocado green goddess salad


  • 2 x 350g pkts Coles Kitchen Green Goddess Salad Kit
  • 1 large avocado, stoned, peeled, cut into wedges
  • 6 radishes, thinly sliced
  • 20 Coles Australian Cooked Black Tiger Prawns (from the deli), peeled, deveined
  • 1 lemon

  1. Step 1

    Place a small frying pan over medium heat. Add almonds from the salad kits and cook, stirring, for 3 mins or until golden. Set aside to cool.

  2. Step 2

    Meanwhile, arrange salad from the salad kits on a serving platter. Top with the avocado, radish and prawns. Use a vegetable peeler to peel 2 large strips of lemon rind. Thinly slice. Cut the lemon into wedges.

  3. Step 3

    Drizzle salad with a little lemon juice and the dressing from the salad kits. Toss to combine. Sprinkle with lemon rind and almonds. Serve with lemon wedges.
