Prawn and kale stir-fry

Ingredients

  • 1 tbs olive oil
  • 1kg raw green prawns, peeled, tails intact
  • 2 garlic cloves, crushed
  • 100g snow peas, trimmed
  • 140g pkt Coles Chopped Kale
  • 1 long red chilli, thinly sliced
  • ¼ cup (60ml) salt-reduced chicken stock
  • 1 tbs hoisin sauce
  • 2 spring onions, thinly sliced diagonally
  • ½ cup coriander leaves

Method

  1. Step 1

    Heat oil in a wok or large frying pan over high heat. Stir-fry prawns, in batches, for 2-3 mins or until prawns curl and change colour.
  2. Step 2

    Add the garlic, snow peas, kale and chilli and stir-fry for 2 mins or until kale just wilts. Add the stock and hoisin sauce and stir-fry until heated through. Sprinkle with spring onion and coriander.
