Prawn and sweet potato noodle stir-fry


  • 8 Coles Deli Thawed Sweet Chilli Prawn Skewers
  • 2 large sweet potatoes
  • 350g pkt Coles Kitchen Superfood Slaw Mix
  • ¼ cup (60ml) coconut sweet chilli sauce
  • Coriander sprigs, to serve

  1. Step 1

    Heat a greased barbecue grill or chargrill on medium-high. Cook the prawns on the grill for 2-3 mins each side or until prawns change colour and are lightly charred.
  2. Step 2

    Use a spiralizer to cut sweet potato into long matchsticks. Heat a frying pan over medium-high heat. Add the sweet potato noodles to the pan. Cook, tossing, for 3 mins or until tender. Transfer the sweet potato noodles to a heatproof bowl. Add the vegetable mix to the pan. Stir-fry for 2 mins or until tender. Return the sweet potato noodles to the pan with the sweet chilli sauce. Cook, tossing, for 1-2 mins or until heated through.

    Divide the sweet potato noodle mixture among serving plates. Top with prawns and sprinkle with coriander sprigs.
