Served with a homemade cocktail sauce with plenty of flavour, these prawn rice paper rolls make for easy and delicious finger food.

Prawn cocktail rice paper rolls

Ingredients

  • 12 large rice paper sheets
  • 250g Coles Thawed Cooked Black Tiger Prawns Medium, peeled, deveined, halved lengthways
  • 1 avocado, stoned, peeled, thinly sliced
  • 1 baby cos lettuce, finely shredded
  • 1/2 cup dill sprigs

Cocktail sauce

  • 1 cup (300g) whole-egg mayonnaise
  • 2 tbs tomato sauce
  • 1 tbs lemon juice
  • 2 tsp Worcestershire sauce
  • 1/2 tsp Tabasco sauce
  • 1 tbs finely chopped chives
  • 1 tbs finely chopped dill

Method

  1. Step 1

    To make the cocktail sauce, combine the mayonnaise, tomato sauce, lemon juice, Worcestershire sauce, Tabasco sauce, chives and dill in a small bowl. Season. Reserve three-quarters of the sauce in a serving bowl.
  2. Step 2

    Fill a shallow dish with warm water. Dip 1 rice paper sheet into the water, then drain and place on a clean board.
  3. Step 3

    Arrange a little of the prawn, avocado, lettuce and dill along the bottom third of the rice paper sheet. Drizzle with a little of the remaining cocktail sauce. Fold edge of the rice paper sheet over the filling. Fold in the sides, then roll up to enclose. Transfer to a plate. Repeat with the remaining rice paper sheets, prawn, avocado, lettuce, dill and remaining cocktail sauce.
  4. Step 4

    Use a small serrated knife to cut each roll in half crossways. Arrange on a serving platter and serve with reserved cocktail sauce.
