Prawn cocktail rolls

Ingredients

  • 2 x 260g pkts Coles Bake At Home Dinner Rolls
  • 400g pkt The Fishery Banana Prawn Cutlets
  • 2 tsp finely grated lemon rind
  • 2 tbs lemon juice
  • 1 tbs olive oil
  • 1/3 cup (100g) whole-egg mayonnaise
  • 1/3 cup (80g) crème fraîche
  • 1/2 tsp Tabasco sauce
  • 40g baby rocket leaves
  • 1 fennel, finely sliced
  • Lemon zest, to serve
  • Lemon wedges

Method

  1. Step 1

    Preheat oven to 220°C. Place rolls on a large baking tray and bake for 3-5 mins or until golden and crisp.

  2. Step 2

    Meanwhile, heat a barbecue or chargrill on high. Place the prawns, lemon rind, lemon juice and oil in a large bowl and toss to combine. Season with pepper. Cook prawns, in batches, for 2 mins each side or until charred and cooked through. Remove tails.

  3. Step 3

    Combine the mayonnaise, crème fraîche and Tabasco sauce in a bowl. Split the rolls lengthways and spread evenly with the mayonnaise mixture. Fill the rolls with rocket, fennel and prawns. Season. Sprinkle with lemon zest and serve with lemon wedges.
