These Mexican-style Prawn tacos are a must-try for dinner. Packed with zesty lime and smoky mayo, they're an easy way to wow your family.

Prawn soft tacos

Ingredients

  • 2 avocados, stoned, peeled
  • 1 tbs lime juice
  • ½ red onion, finely chopped
  • ½ long red chilli, seeded, finely chopped (optional)
  • 1 tomato, finely chopped
  • 12 white corn tortillas
  • 1 baby cos lettuce, leaves separated
  • 36 (about 750g) cooked tiger prawns, peeled
  • ¾ cup Always Fresh Fire Roasted Red Pepper Strips (roasted capsicum)
  • 1 cup coriander sprigs
  • Lime wedges, to serve

Smoky mayonnaise

  • ½ cup (150g) whole egg mayonnaise
  • ¼ tsp smoked paprika
  • ¼ tsp Mexican chilli powder
  • 2 tsp lime juice, extra

Method

  1. Step 1

    Place avocado and lime juice in a bowl and mash until almost smooth. Stir in onion, chilli, if desired, and tomato. Season.
  2. Step 2

    To make smoky mayonnaise, combine mayonnaise, paprika, chilli powder, lime juice and 2 tsp water in a bowl. Season.
  3. Step 3

    Heat the tortillas following packet directions. Divide tortillas among serving plates. Top with guacamole, lettuce, prawns, capsicum, smoky mayonnaise and coriander. Serve with lime wedges.
