Prawn tacos with salsa roja


  • 8 Garlic Prawn Skewers made with Aussie Prawns Thawed
  • ½ cup (130g) Coles Mexico Smokey Salsa Roja
  • 12 small flour tortillas
  • 350g pkt Coles Kitchen Broccoslaw Kit
  • 1 ripe avocado, stoned, peeled, mashed

  1. Step 1

    Heat a barbecue grill or chargrill on medium-high. Drizzle the prawns with half the salsa roja. Cook the prawns on the grill for 2 mins each side or until lightly charred and cooked through. Transfer to a plate.

  2. Step 2

    Spray tortillas with olive oil spray. Cook the tortillas on grill for 1-2 mins each side or until lightly charred but still soft. Divide among serving plates.
  3. Step 3

    Place salad mix from the kit in a large bowl. Add the cranberries and half the dressing from the kit. Toss to combine.
  4. Step 4

    Remove the prawns from skewers. Divide the avocado, salad mixture and prawns among tortillas. Drizzle with the remaining salsa roja and dressing from kit. Season. Serve immediately.
