Prawn, watermelon and fetta skewers with mint oil

Ingredients

  • 1 continental cucumber, peeled into ribbons
  • ¼ watermelon, cut into 2cm pieces
  • 24 Coles Cooked Black Tiger Prawns, peeled leaving tails intact, deveined
  • 200g Tasmanian fetta, cut into 2cm pieces
  • ½ cup mint leaves
  • ⅓ cup (80ml) extra virgin olive oil
  • 1 tbs lemon juice

Method

  1. Step 1

    Thread the cucumber, watermelon, prawns and fetta evenly onto skewers. Arrange on a serving platter.
  2. Step 2

    Blend mint, oil and lemon juice in a blender until smooth. Season. Drizzle over the skewers. Serve immediately.
