Ingredients

  • 1kg Coles Fresh Banana Prawns, peeled leaving tails intact, deveined
  • 1 tbs sweet chilli sauce
  • 2 tbs olive oil
  • 270g pkt soba noodles
  • 200g green beans, trimmed, halved
  • 1 cup (120g) frozen peas
  • ½ cup mint leaves
  • ½ cup coriander leaves
  • 1 tbs fish sauce
  • 1 tbs lime juice
  • 1 garlic clove, crushed

Method

  1. Step 1

    Place prawns, sweet chilli sauce and 1 tbs of the oil in a bowl and toss to combine. Season. Heat a barbecue grill or chargrill on medium-high. Cook prawns for 2 mins each side or until just cooked through.

  2. Step 2

    Meanwhile, bring a large saucepan of water to the boil. Add the noodles and cook for 3 mins. Add beans and peas and cook for a further 1 min or until beans are tender. Drain well.
  3. Step 3

    Arrange noodle mixture, prawns, mint and coriander on a large serving platter. Season. Combine the fish sauce, lime juice, garlic and remaining oil in a small bowl. Drizzle over the prawns to serve.
