For a no-fuss dinner, try this colourful prosciutto wrapped salmon, served with golden wedges.

Prosciutto-wrapped salmon with wedges


  • 600g white potatoes, cut into thin wedges
  • 280g jar Coles Chargrilled Peppers (capsicum), drained, oil reserved
  • 4 slices prosciutto
  • 4 Coles Responsibly Sourced Tasmanian Salmon Portions Skin Off
  • 1/2 bunch flat-leaf parsley, chopped

  1. Step 1

    Preheat oven to 240°C. Line 2 baking trays with baking paper. Place potato on 1 lined tray. Drizzle with 1 tbs reserved oil and toss to combine. Roast for 20 mins or until potato is golden and tender. 

  2. Step 2

    Meanwhile, wrap 1 slice of prosciutto around each salmon portion. Place on remaining tray with capsicum and roast for 10 mins or until cooked through. 

  3. Step 3

    Divide the potato, salmon and capsicum among serving plates. Sprinkle with parsley to serve.
