Ready to eat in just 15 minutes, these quick pumpkin, caramelised onion and fetta flatbreads make for a tasty snack or side. Simply top with rocket and enjoy!

  • 500g pkt Coles Australian Diced Butternut Pumpkin
  • 3 x 210g Coles Kitchen Garlic & Herb Flatbreads
  • 200g caramelised onion relish
  • 200g Danish-style fetta, crumbled
  • 30g baby rocket leaves

  1. Step 1

    Line 3 large baking trays. Preheat oven to 210°C. Place pumpkin on a lined tray. Spray with olive oil spray. Bake for 10 mins or until just tender.
  2. Step 2

    Meanwhile, place flatbreads on lined trays. Spread evenly with relish.
  3. Step 3

    Top flatbreads with pumpkin and fetta. Bake for 12-15 mins or until flatbreads are golden brown and crisp. Sprinkle with rocket and cut into pieces to serve.
