A warming pasta bake on a cold night is comfort food deluxe. And this easy Quick beef and garlic sausage pasta bake recipe is a weeknight go-to treasure.

Quick beef and garlic sausage pasta bake

Ingredients

  • 250g spiral pasta
  • 2 tsp olive oil
  • 500g pkt Coles Finest Australian Beef Sausages with Garlic & Parsley
  • 1 brown onion, coarsely chopped
  • 2 zucchini, coarsely chopped
  • 1 bunch asparagus, trimmed, cut into thirds diagonally
  • 500g jar pasta sauce
  • ⅔ cup (80g) frozen baby peas
  • ¼ cup chopped basil
  • 1 cup (100g) grated pizza cheese
  • Basil leaves, to serve
  • Mixed salad, to serve

Method

  1. Step 1

    Cook the pasta in a medium saucepan of boiling water following packet directions or until al dente. Drain.
  2. Step 2

    Meanwhile, heat oil in a large saucepan over medium heat. Add the sausages and cook, turning, for 6 mins or until cooked through. Transfer to a plate. Cut into 1.5cm slices diagonally. Add the onion and zucchini to the pan and cook for 3 mins or until lightly browned. Add the asparagus, pasta sauce and peas. Cook for 2 mins or until sauce reduces slightly.
  3. Step 3

    Stir the sausage, pasta and basil into the vegetable mixture. Season.
  4. Step 4

    Preheat grill on high. Transfer the pasta mixture to an 8-cup (2L) baking dish. Sprinkle with cheese. Cook under grill for 3 mins until cheese is golden and bubbling. Sprinkle with extra basil and serve with salad.
