Quick Beef Burrito Bowls

Ingredients

  • 250g pkt microwavable brown rice
  • 500g Coles No Added Hormones Beef 3 Star Regular Mince
  • 40g Coles Mexican Seasoning Mix Mild
  • 200g jar mild taco sauce
  • 300g pkt Coles Kitchen Fine Cut Coleslaw
  • 1 carrot, shredded
  • 1 avocado, stoned, peeled, finely chopped
  • 200g medley Perino tomatoes, halved
  • 1/2 cup (120g) sour cream
  • Lime wedges, to serve
  • Coriander sprigs, to serve

Method

  1. Step 1

    Heat the rice following packet directions. Heat a large non-stick frying pan over high heat. Add the mince and cook, stirring with a wooden spoon to break up lumps, for 5 mins or until the mince changes colour. Add the taco seasoning and half the taco sauce. Cook for 1-2 mins or until heated through.

  2. Step 2

    Divide the rice, mince mixture, coleslaw and carrot among serving bowls. Top with avocado and tomato. Season.

  3. Step 3

    Place the sour cream in a small bowl and stir in remaining taco sauce. Serve burrito bowls with the sour cream mixture, lime wedges and coriander sprigs.
