Quick chicken and ancient grains salad bowl

Ingredients

  • 600g Coles RSPCA Approved Chicken Breast Fillets
  • 1 tbs lemon pepper seasoning
  • 250g pkt ancient grains microwavable rice
  • 350g pkt Coles Kitchen Kaleslaw Salad Kit
  • 1/2 cup chopped basil

Method

  1. Step 1

    Heat a greased barbecue grill or chargrill on medium. Sprinkle chicken with seasoning. Cook for 4-5 mins each side or until cooked through.

  2. Step 2

    Heat the rice following packet directions. Transfer to a heatproof bowl with slaw from the salad kit. Add two-thirds of the dressing from the salad kit and toss to combine. 

  3. Step 3

    Thinly slice the chicken. Divide the rice mixture and chicken among serving bowls. Sprinkle with basil and seeds from the salad kit. Drizzle with the remaining dressing to serve.
