Quick lamb steak sandwiches

Ingredients

  • ½ small red onion, thinly sliced
  • 1 tbs lemon juice
  • 500g Coles Australian Lamb Sizzle Steak
  • 1 tbs pistachio dukkah
  • 400g Coles Turkish Pide
  • 200g beetroot dip
  • 125g fetta, thinly sliced
  • 1 tomato, thinly sliced
  • 40g Coles Australian 4 Leaf Salad

Method

  1. Step 1

    Combine onion and lemon juice in a bowl. Set aside for 10 mins to soak. Drain.
  2. Step 2

    Meanwhile, heat a large non-stick frying pan over medium-high heat. Spray both sides of each steak with olive oil spray. Sprinkle with the dukkah. Cook the steaks, in 2 batches, for 1½ mins each side for medium-rare or until cooked to your liking. Transfer to a plate and cover with foil.
  3. Step 3

    Preheat a grill on medium. Use a large serrated knife to cut the bread into 4 even portions and split each portion horizontally. Arrange the bread in a single layer on a large baking tray. Cook under grill for 30 secs each side or until lightly toasted.
  4. Step 4

    Divide the bread bases among serving plates. Spread each base evenly with the dip. Top with the fetta, steaks, tomato and onion. Sprinkle with the salad leaves and top with the bread tops to serve.
