Quick lentil, bacon and kale soup

Ingredients

  • 1 tbs olive oil
  • 1 brown onion, finely chopped
  • 1 carrot, peeled, finely chopped
  • 2 celery sticks, finely chopped
  • 3 bacon rashers, finely chopped
  • 2 garlic cloves, crushed
  • 1 tsp finely chopped thyme
  • 4 cups (1L) salt-reduced chicken or vegetable stock
  • 400g can lentils, rinsed, drained
  • 140g pkt chopped kale

Method

  1. Step 1

    Heat the oil in a large saucepan over medium heat. Add the onion, carrot, celery, bacon, garlic and thyme. Cook, stirring occasionally, for 10 mins or until onion softens. Add the stock and bring to the boil. Cook for 10 mins or until vegetables are tender.
  2. Step 2

    Stir in the lentils and kale. Bring to a simmer. Ladle the soup among serving bowls. Serve immediately.
