  • 650g Coles Australian RSPCA Approved Chicken Breast Fillets
  • 350g pkt Coles Kitchen Honey Mustard Salad Kit
  • 3/4 cup (60g) Coles Grated Parmesan Cheese
  • 2 tbs Coles Dijon Mustard
  • 1 Calypso or Kensington Pride mango, stoned, peeled, thinly sliced

  1. Step 1

    Preheat oven to 220°C. Cut chicken in half horizontally and place on a lightly greased baking tray.
  2. Step 2

    Remove croutons from the salad kit and lightly crush. Combine the crouton crumbs with 1/2 cup (40g) parmesan in a small bowl. Spread the chicken with mustard and press into parmesan mixture to coat. Lightly spray with olive oil spray. Bake for 15 mins or until golden brown and cooked through.
  3. Step 3

    Prepare salad in a large bowl. Add the mango and toss to combine. Divide chicken and salad among serving plates. Sprinkle with remaining parmesan.
