This pork taco recipe is a weeknight wonder. Filled with caramelised pineapple for sweetness and tang, kaleslaw for crunch, and avo for some creaminess, every bite is a treat.

Quick pork tacos with caramelised pineapple


  • 400g Coles Australian Pork Sizzle Steaks
  • 1/2 small pineapple, peeled, cored, cut into thin wedges
  • 1/4 cup (60ml) maple syrup
  • 350g pkt Coles Kitchen Kaleslaw Salad Kit
  • 1/2 bunch coriander, torn
  • 200g sour cream
  • 2 tbs chipotle sauce
  • 10 small soft tortillas, warmed
  • 1 avocado, stoned, peeled, cut into wedges

  1. Step 1

    Preheat grill on high. Line 2 baking trays with foil. Spray with olive oil spray. Place pork on 1 lined tray and pineapple on the remaining lined tray. Brush with maple syrup. Cook pork and pineapple under the grill, turning occasionally, for 8-10 mins or until golden. Slice the pork.
  2. Step 2

    Meanwhile, prepare the salad kit in a large bowl following packet directions. Add the coriander and toss to combine.
  3. Step 3

    Combine the sour cream and chipotle sauce in a small bowl. Place the tortillas on a serving platter and spread with chipotle mixture. Top with the kaleslaw mixture, pineapple, pork and avocado to serve.
