  1. Step 1

Preheat oven to 220°C. Line 2 baking trays with baking paper. Place the baby broccoli on 1 tray. Spray with olive oil spray and sprinkle with parmesan. Place the chicken and tomatoes on remaining tray. Spray with olive oil spray. Season.

  2. Step 2

Place both trays in the oven. Roast chicken and tomatoes for 20-25 mins or until the chicken is cooked through, adding the baby broccoli for the last 10-15 mins of cooking.

  3. Step 3

Place a greased frying pan over medium heat. Add spinach and a little water. Cook, tossing, for 2-3 mins or until spinach just wilts. Slice the chicken and divide among serving plates with baby broccoli, tomatoes and spinach.

Recipe tip

Got zucchini in the fridge? Use it instead of the baby broccoli.

Buy it right
Fresh baby broccoli has firm stems and no signs of flowering.

Store it right
Place baby broccoli in a loose plastic bag. Store in coolest part of fridge for up to 1 week.

Cook it right
If you’re boiling baby broccoli, cook until the stems are just bright green and tender-crisp.
