Quick roast chicken with parmesan baby broccoli

Ingredients

  • 2 bunches baby broccoli
  • 1/3 cup (25g) finely grated parmesan
  • 4 small Coles RSPCA Approved Chicken Breast Fillets
  • 500g vine-ripened cherry tomatoes
  • 120g pkt Coles Australian Baby Spinach

Method

  1. Step 1

    Preheat oven to 220°C. Line 2 baking trays with baking paper. Place the baby broccoli on 1 tray. Spray with olive oil spray and sprinkle with parmesan. Place the chicken and tomatoes on remaining tray. Spray with olive oil spray. Season.

  2. Step 2

    Place both trays in the oven. Roast chicken and tomatoes for 20-25 mins or until the chicken is cooked through, adding the baby broccoli for the last 10-15 mins of cooking.

  3. Step 3

    Place a greased frying pan over medium heat. Add spinach and a little water. Cook, tossing, for 2-3 mins or until spinach just wilts. Slice the chicken and divide among serving plates with baby broccoli, tomatoes and spinach.
