Rainbow sandwiches

Ingredients

  • ¼ small avocado, peeled
  • 1 tsp lemon juice
  • 4 slices wholemeal bread
  • 2 lettuce leaves, shredded
  • Softened butter, to serve
  • 2 tsp corn relish
  • 1 slice tasty cheddar
  • 1 small tomato, thinly sliced
  • 6 slices DON English Style Leg Ham
  • 4 carrot sticks

Method

  1. Step 1

    Mash the avocado in a bowl with the lemon juice. Place 1 slice of bread on a board. Spread with avocado mixture. Top with the lettuce. Spread another slice of bread with butter. Spread with corn relish. Top with cheddar. Place over the lettuce on the bread.
  2. Step 2

    Pat tomato dry with paper towel. Top another slice of bread with tomato and ham, folding ham to fit. Place over sandwich stack on the board. Spread remaining slice of bread with butter. Place, butter-side down, over ham on the stack.
  3. Step 3

    Cut the stack into quarters. Carefully use a chopstick to make a hole in each quarter. Insert a carrot stick to secure.
