This tasty raspberry gin fizz will be your go-to cocktail this summer. For a mocktail option, just swap the gin for more kombucha.

Ingredients

  • 125g raspberries
  • 2 limes
  • Crushed ice, to serve
  • 5 cups (1.25L) Remedy Kombucha Raspberry Lemonade
  • 1 cup (250ml) pink gin or Remedy Kombucha Raspberry Lemonade, extra
  • Mint sprigs, to serve
  • Raspberries, extra, to serve

Method

  1. Step 1

    Place the raspberries in a food processor and process until smooth. Strain through a fine sieve into a bowl, pressing with the back of a spoon. Discard solids.
  2. Step 2

    Juice 1 lime. Thinly slice remaining lime. Place ice in a 10-cup (2.5L) jug. Add kombucha, gin or extra kombucha, lime juice and lime slices. Pour over the raspberry puree. Stir well to combine.
  3. Step 3

    Divide the kombucha mixture evenly among serving glasses. Top with mint and extra raspberries to serve.
