An explosion of colour and flavour, these raspberry tiramisu trifles are so easy in prep and fun!

Raspberry tiramisu trifles

Ingredients

  • 500g mascarpone
  • 300ml thickened cream
  • 1 tsp vanilla bean paste
  • 1/4 cup (40g) icing sugar mixture
  • 1 cup (250ml) caramel-flavoured coffee syrup
  • 1/2 cup (125ml) orange juice
  • 16 sponge finger biscuits, halved
  • 300g raspberries
  • Cocoa powder, to sprinkle

Method

  1. Step 1

    Use an electric mixer to whisk the mascarpone, cream, vanilla, icing sugar and half the syrup in a large bowl until soft peaks form.

  2. Step 2

    Combine the orange juice and remaining syrup in a shallow bowl. Dip half the biscuit in the juice mixture and arrange in serving glasses. Top with half the raspberries and half the mascarpone mixture. Sprinkle with cocoa powder. Repeat with remaining biscuit dipped in remaining juice mixture, raspberries and mascarpone mixture. Place in the fridge for 2 hours to chill.

  3. Step 3

    Sprinkle with a little more cocoa powder to serve.
