Roast beef and capsicum aioli baguettes

Ingredients

  • 330g jar roasted peppers (capsicum), drained, or deli bought or home grilled capsicum
  • 1 garlic clove, finely chopped, or 1 tsp minced garlic
  • 2 anchovy fillets, finely chopped (optional)
  • 1 cup (300g) mayonnaise or store-bought aioli
  • 1 1/2 Coles Bakery Stone Baked by Laurent Sourdough Baguettes* or bread of choice
  • 1/2 cup basil, parsley or oregano leaves
  • 500g leftover roast beef, lamb or pork, thinly sliced
  • 200g cheese slices such as swiss, tasty or colby
  • 1 bunch watercress, sprigs picked, or rocket or baby spinach leaves

Method

  1. Step 1

    Place capsicum in a food processor with the garlic and anchovy and process until smooth. Add mayonnaise or store-bought aioli and process until well combined. Season.

  2. Step 2

    Use a large serrated knife to cut the baguettes into 6 even portions. Split each baguette in half crossways.
  3. Step 3

    Spread the capsicum aioli over the cut sides of each baguette. Place the baguette bases on a clean work surface and top with the basil, parsley or oregano. Continue layering with the beef, cheese and salad leaves. Drizzle with any remaining capsicum aioli and top with baguette tops. Wrap in baking paper and secure with kitchen string to serve.
