Ingredients

  • 125g green beans, halved lengthways
  • 8 thick slices crusty bread, toasted
  • 150g Red Rock Deli Roasted Red Capsicum, Pecorino, Cashews & Basil Dip
  • 2/3 cup (160g) hummus
  • 3 cups (75g) picked watercress sprigs
  • 400g shaved roast beef
  • ¼ cup (20g) shaved parmesan

Method

  1. Step 1

    Place the beans in a heatproof bowl. Cover with boiling water. Set aside for 5 mins or until tender. Drain well.
  2. Step 2

    Place the toast on serving plates. Spread evenly with dip and hummus. Top with the beans, watercress, beef and parmesan. Serve immediately.
