Ingredients

  • 1.5kg Coles Australian Pork Shoulder Roast Boneless
  • 2 tbs olive oil
  • 1 tsp sea salt
  • 1 red onion, cut into wedges
  • 500g baby white potatoes, halved
  • 2 cups (500ml) chicken stock
  • 2 Royal Gala apples, halved
  • 4 plums
  • 1 tbs apple cider vinegar
  • Steamed baby broccoli, to serve

Method

  1. Step 1

    Preheat oven to 230°C. Place the pork, rind-side up, in a large flameproof roasting pan. Rub all over with oil and salt. Roast for 30 mins.
  2. Step 2

    Reduce oven to 200°C. Add the onion, potato and stock to the pan. Roast for 45 mins. Add apple and plums and roast for 15 mins or until apple is tender. Transfer pork and vegetables to a plate. Set aside, covered, for 10 mins to rest.
  3. Step 3

    Meanwhile, place pan with pan juices over high heat. Add vinegar and bring to the boil. Simmer for 5 mins or until sauce has thickened.
  4. Step 4

    Season the pork, apple and plums. Serve with the sauce and steamed baby broccoli.
