Roasted pumpkin hommus


  • 400g pumpkin, peeled, seeded, cut into 2cm pieces
  • 400g can chickpeas, rinsed, drained
  • 1/4 cup (40g) raw almonds
  • 2 tbs tahini
  • 2 tbs lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/3 cup (80ml) Coles Classic Olive Oil

  1. Step 1

    Preheat oven to 200°C. Line a large baking tray with baking paper. Place the pumpkin on the lined tray and bake for 20 mins or until tender. Set aside to cool. Reserve a little pumpkin.
  2. Step 2

    Place chickpeas, almonds, tahini, lemon juice, cumin, coriander, oil and remaining pumpkin in a food processor and process until smooth.
  3. Step 3

    Transfer the chickpea mixture to a serving bowl. Sprinkle with reserved pumpkin to serve.

    Serve withmint and chopped almonds.
