Add a sweet and refreshing twist to an easy bocconcini salad by adding rockmelon.

Rockmelon and bocconcini salad


  • 1 small ripe rockmelon or honeydew melon, halved, seeded
  • 220g baby bocconcini, drained
  • Basil leaves, to serve
  • Dried chilli flakes, to serve (optional)
  • Extra virgin olive oil, to serve

  1. Step 1

    Use a melon baller to scoop balls from the melon. Arrange on a serving plate with the bocconcini. 

  2. Step 2

    Sprinkle with basil leaves and dried chilli flakes, if using. Drizzle with oil and season to serve.
