Middle Easter spiced beef pita pockets

Ingredients

  • 500g Coles Australian No Added Hormones Lean Beef Mince
  • 1 brown onion, finely chopped
  • 4 garlic cloves, crushed
  • 2 tomatoes, seeded, finely chopped
  • 1/2 red capsicum, seeded, finely chopped
  • 1 1/4 tsp ground allspice
  • 1/3 cup chopped flat-leaf parsley
  • 1 1/2 tsp sea salt flakes
  • 1 tsp freshly ground black pepper
  • 8 pita breads
  • 2 tbs vegetable oil
  • Mint leaves, to serve

Dip

  • 1 cup (280g) Coles Greek Style Yoghurt
  • 2 tbs lemon juice
  • 1/4 cup chopped mint
  • 1 garlic clove, crushed

Method

  1. Step 1

    Place the mince in a large bowl. Add the onion, garlic, tomato, capsicum, allspice, parsley, salt and pepper. Use your hands to mix until well combined.
  2. Step 2

    Arrange half the pita on a clean work surface and top with the mince mixture, spreading to evenly cover the pita. Arrange remaining pita over the mince mixture and press to secure. Brush each side of the pita with oil.
  3. Step 3

    Heat a frying pan over medium heat. Cook the pitas, in batches, for 3-4 mins each side or until golden brown and cooked through.
  4. Step 4

    To make the yoghurt dip, combine the yoghurt, lemon juice, mint and garlic in a small bowl. Season.
  5. Step 5

    Cut the pitas into wedges. Sprinkle with mint leaves and serve immediately with the yoghurt dip.
