  • 2 tsp lemon juice
  • 3 cups (480g) pure icing sugar, sifted

Method

  1. Step 1

    Whisk the egg white* and lemon juice in a small bowl until lightly frothy.

  2. Step 2

    Place the icing sugar in a medium bowl. Add the egg white mixture and stir until a firm icing forms. Cover the surface of the icing with plastic wrap.
