Flaky chunks of hot smoked salmon are a perfect contrast to a fresh bowl of green goodness. This super salad is bulked up with nutritious brown rice.

Ingredients

  • 450g pkt microwavable brown rice
  • 150g snow peas, trimmed, halved diagonally
  • 120g pkt Coles Australian Baby Rocket
  • 1 avocado, peeled, stoned, thinly sliced
  • 185g pkt Coles Tasmanian Hot Smoked Salmon Fillets
  • 2 tbs rice wine vinegar
  • 2 tbs lime juice
  • 1 tsp caster sugar
  • ½ tsp sesame oil
  • 1 long red chilli (optional), thinly sliced

Method

  1. Step 1

    Heat the rice following packet directions.
  2. Step 2

    Meanwhile, cook the snow peas in a saucepan of boiling water for 1 min or until bright green and just tender. Refresh under cold water. Drain.
  3. Step 3

    Combine the rice, snow peas, rocket, avocado and salmon in a large bowl. Divide among serving bowls.
  4. Step 4

    Place vinegar, lime juice, sugar, oil and chilli, if using, in a screw-top jar. Shake well to combine. Drizzle the dressing over the salad. Season to serve.
