Salmon and potato tray bake

Ingredients

  • 500g washed potatoes, quartered
  • 1 lemon, cut into wedges
  • 4 skin-on salmon fillets
  • 2 red birdseye chillies, quartered lengthways
  • 6 thyme sprigs
  • 250g vine-ripened cherry tomatoes

Method

  1. Step 1

    Preheat oven to 200°C. Cook potato in a large saucepan of boiling water for 10 mins or until tender. Drain well.
  2. Step 2

    Line a large baking pan with baking paper. Add the potato and lemon. Season. Bake for 10 mins or until golden.
  3. Step 3

    Place salmon over potato mixture. Sprinkle with chilli and thyme. Arrange tomatoes around the pan. Bake for 15 mins or until potato is tender and salmon is cooked to your liking.
