  • 1 red oak leaf lettuce
  • 150g smoked salmon slices
  • 1 Granny Smith apple, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 zucchini, peeled into thin ribbons
  • 1/4 cup (75g) mayonnaise
  • 2 tsp wholegrain mustard
  • 1 tbs apple cider vinegar
