Cook the potatoes in a saucepan of boiling water for 10 mins. Add salmon. Simmer for 4 mins or until salmon is just cooked through. Transfer the salmon to a plate. Rinse potatoes under cold water and drain well. Return potatoes to the pan and use a potato masher or fork to mash. Flake the salmon. Add salmon and chives to potato and stir to combine. Roll 1-tbs portions of the salmon mixture into 24 patties and place on a baking tray.
Place a greased large non-stick frying pan over medium-high heat. Cook the salmon patties, turning, for 5 mins or until golden and heated through.
Prepare salad kit, reserving one-third of the almonds and one-third of the dressing. Divide the salad, apple and salmon patties among serving plates. Drizzle with remaining dressing and sprinkle with remaining almonds.
